WAFFLES OR PANCAKES?
Are you a waffle or pancake person? I am personally a big fan of both! But, the crust of the waffle gets me every single time. When I first cut into a good waffle and the steam comes out of it, all my mouth can do is water. They are one of the best breakfast and brunch items out there!
However, there is nothing like a good switch-up to keep the mornings exciting. Those who know me know that Snickerdoodles and Churros are two of my favorite sweet things to eat. Now let’s put them into waffle form! My Easy Cinnamon Sugar Waffles with Chocolate Sauce is the best of both worlds. One bite, and you won’t be able to resist!
WHAT MAKES A WAFFLE BATTER DIFFERENT?
The main cause for a waffle’s deliciousness is the batter itself. Waffle batter usually has a higher fat and sugar content compared to pancake batter. The additional fat sugar allows for the batter to crisp up beautifully into a golden color. The inside, however, stays light and fluffy.
No matter what you do, never use pancake batter to make waffles. Even if a box of pancake mix says that you can, please do not. You will not get the same end result. You’ll just get a pancake-shaped as a waffle. If you do not have time to make a batter from scratch, I always suggest getting a quality waffle mix.

Cinnamon Sugar Waffle Ingredients
The ingredients are pretty simple in this recipe; but, let’s still walk through them to understand them.
All-Purpose Flour: The flour thickens the batter and helps all of the ingredients come together. The batter should have a medium consistency (not too thick and not too thin).
Baking Powder: The baking powder acts as the leavening agent for the batter. Without it, the batter will not rise and expand.
Salt: The salt is automatically added to the batter. The salt helps to balance the flavors. You always need a little bit of salt in baked goods. Make sure not to confuse the salt with sugar when measuring.
Sugar: The sugar adds the right amount of sweetness to the batter. Even though we are dipping the waffles in cinnamon sugar, you want to make sure that the waffle itself is properly sweetened.
Cinnamon: The cinnamon is used both in the topping and in the waffle. It adds another layer of flavor to the waffle. You only need about a tbsp in the actual batter.
Milk or Buttermilk: The milk or buttermilk acts as the liquid component of the batter. It also helps to create a looser batter. A looser batter will create a crisp golden crust. I like using buttermilk because it’s richer and adds more flavor to the waffles.
Eggs: The eggs act as a binder for the batter. You only need two for this recipe.
Butter: I used salted butter in this recipe. It adds more flavor in my opinion. Plus, the butter helps to create a beautiful golden color. Make sure that the butter is fully cooled before adding the liquid ingredients. You do not want to risk the chance of cooking the egg yolks.
Vanilla Extract: I added just a tablespoon of vanilla extract to give some extra flavor. I always suggest using the pure vanilla extract and not the imitation vanilla extract.
Semi-Sweet or Milk Chocolate Chips: The choice is yours when it comes to chocolate chips. Semi-Sweet Chocolate chips are typically used in almost every chocolate chip cookie recipe. I like the slight bitterness that it adds to the sauce.
How to make Cinnamon Sugar Waffles
Now that we have gotten the ingredients out of the way, we get into actually making one of my favorite breakfast items! Waffles are simple to make and easy to eat. But, there are certain steps that you should take to get the best end result!
After eating these, I had to eat another one! The steps are pretty simple which means that you will be eating before you know it!
The full written recipe is below, but here’s an overview.
Step 1: Turn on the Waffle Iron. Always make sure that the waffle iron is on first. Preheat waffle iron between medium-high to high.
Step 2: Mix the Dry Ingredients. In a large bowl, mix the flour, baking powder, salt, sugar, and cinnamon.
Step 3: Mix the Wet Ingredients. In another bowl, mix the milk, egg yolks, melted butter, and vanilla.
Step 4: Whip the Egg Whites. In a small cold metal bowl, whip the egg whites with an electric mixer until they are pearly white and have stiff peaks (about 2 - 3 minutes). The egg whites should look like meringue without the sugar.
Step 5: Make the Batter. Mix together the dry and wet ingredients just until smooth. Add the whipped egg whites and fold them into the batter. Refrigerate the batter while you make the chocolate sauce.
Step 6: Make the Chocolate Sauce. Add the chocolate chips to a microwaveable bowl. Melt over the course of 1 - 2 minutes making sure to take the bowl out to stir occasionally. When fully melted, add the melted butter and mix until fully combined.
Step 7: Begin Making the Waffles. Spray the preheated waffle iron with non-stick spray. Pour ⅓ - ½ of a cup of batter into the waffle iron and spread. Cook until golden brown.
Step 8: Dip the Waffles in Cinnamon Sugar. While the waffles are still hot, dip lightly in melted butter. Then, dip the waffles in the cinnamon sugar.
Step 9: Garnish & Serve! Drizzle with chocolate sauce and serve hot. Enjoy!
