Peach Bourbon Glazed Shrimp


Summertime comes with sunny days, warm weather, cookouts, and vacations. But, this year went very differently for everyone. From everything shutting down to social distancing, Summer 2020 has been a big adjustment for everyone. Although a lot of our usual social gatherings have been canceled, we should still eat well! No matter what is going on, this is the time that we should be enjoying our favorite summer foods! Fresh salads, BBQ ribs, burgers, and so many more are summer staples that can still be enjoyed! But, as for this Peach Bourbon Glazed Shrimp recipe, nothing compares!

This simple yet delicious recipe will knock your socks off! This is the perfect time for fresh fruits. They are in abundance, and can be used in so many ways. Peaches and Bourbon are a great food and liquor pairing that has been used for years. The bourbon adds some amazing depth to the glaze. It also does not overpower the taste of the peach preserves. The glaze is sweet, but savory at the same time. The glaze can also be paired with other seafood. When I originally made this recipe, I had some extra salmon fillets that were going to be used for dinner. I added some of the glaze to the fillets, and it made my mouth water. Whenever you are making a glaze, there is usually going to be some sort of sugary component in the recipe. Sugar, honey, syrup, and fruit preserves are some of the many ingredients that give glazes their shiny color and sticky feel.

When using wine or liquor in your sauces, always make sure that the alcohol has a chance to cook off. You do not want the sauce to be overpowering for your guests. The main purpose of using wines and liquors is to get the fruity and earthy notes out of them and into the sauce. Wines and liquors also add some body to the overall dish. From the most acidic to the most earthy, they provide an array of different tastes to dishes. 

Whenever I think of peaches, I immediately think of Summer in the South with bright and sunny days. I can see fresh peaches growing on trees just itching to be picked. These sweet fruits are a Southern favorite that play a big role in many amazing dishes, especially desserts! There is nothing like a homemade peach cobbler or tart. Eating peaches and peach desserts remind me of how something so simple could create so many memories.

When making this recipe, I wanted to make it quick and easy. Since I decided to use shrimp, I knew that the cooking time would be very quick. Make sure to season your shrimp ahead of time and allow them to marinate in the refrigerator according to the recipe below. When seasoning, be mindful of the amount of salt that you use. Shrimp are smaller seafood, so they will absorb salt very fast. Overly salty shrimp is not the goal. Remember to be mindful of your heat as well. A good sear or grill marks on your shrimp is what you want. When the shrimp are bright pink and plump, you should be good to go. This recipe will add some much needed summer flavor to your next dinner or cookout! So, stop what you’re doing and try this recipe out! I know you’ll enjoy it just as much as I did!

Peach Bourbon Glazed Shrimp

Ingredients:

Shrimp
  • 2 lbs - Jumbo Shrimp, tail-on
  • 1 tbsp - salt
  • 2 tsp - black pepper
  • 3 tsp - paprika
  • 6 tbsp - EVOO or vegetable oil
  • 1 tbsp - parsley, minced
  • 8 - 10 each - mini wooden skewers 
Peach Bourbon Glaze
  • 10 oz - Peach Preserves
  • 4 tbsp - Bourbon
  • 4 tbsp - apple cider vinegar
  • 2 1/2 tsp - onion powder
  • 2 tsp - garlic powder
  • 3 tsp - salt
  • 1/2 tsp - pepper
  • 1/8 tsp (1 pinch) - cayenne pepper

Instructions:

  1. Peel and devein your shrimp, if needed.
  2. Season your shrimp with salt, paprika, and black pepper.
  3. Add 3 tbsp of oil and mix.
  4. Add shrimp to the skewers. If grilling, allow the skewers to soak for a few minutes in water to prevent excessive burning. 
  5. Let the shrimp marinate for 20 minutes while you make the glaze.
  6. Mix all of the ingredients for the glaze in a small sauce pot.
  7. Bring the mixture to a boil and then return to low heat.
  8. Heat a cast iron skillet or saute pan with 3 tbsp of oil on medium high heat. 
  9. Add your shrimp skewers and sear on both sides. 
  10. When the shrimp are almost finished cooking begin brushing the glaze on both sides of the skewers with a pastry brush.
  11. Garnish with minced parsley and serve.
