Easy Greek Chicken Kabobs


A simple and easy kabob recipe filled with fresh flavors! Loaded with tender chicken marinated in a creamy Greek marinade and grilled vegetables, these Easy Greek Chicken Kabobs are perfect for the summer! They won’t disappoint!

Grilled and Full of flavor!

With all of this amazing weather, eating outside has become a regular thing for me! That also means that grilled foods are the way to go! One of my favorite things to grill is a simple kabob full of tender meat and fresh vegetables!

My Easy Greek Chicken Kabobs are the perfect addition to your summer cookouts! They are simple to make and full of fresh flavors that are sure to please! Paired with a few great side dishes, these kabobs are the perfect meal for this summer!

don’t have time to grill? Make them in the oven!

These kabobs can easily be cooked on the grill in no time at all! But, I know not everyone has or feels like using a grill. However, that doesn’t mean you can’t make these easy and delicious kabobs!

Here is an easy way to make these kabobs in the oven:

  • Before assembling your kabobs on wooden or metal skewers, heat your oven to 425°F.

  • Line a baking sheet with aluminum foil and a wire rack. Spray the wire rack with non-stick cooking spray.

  • Assemble the kabobs on the wire rack. Bake the kabobs for 20 - 25 minutes. When the chicken reaches between 130 - 135°F remove the skewers from the oven and brush them with extra virgin olive oil.

  • Turn on the broiler of the oven to HIGH. Broil the skewers until they reach 165°F internally. The oil and broiler will help to create a char on the skewers similar to that of a grill.

  • Remove the skewers from the oven and season to taste with kosher salt and ground black pepper. Serve and enjoy!

EASY GREEK CHICKEN KABOB Ingredients:

The ingredients are pretty simple in this recipe; but, let’s still walk through them to understand them.

This recipe is full of fresh flavors! The ingredients tasted even better after grilling! I couldn’t get enough of this recipe!

  • Greek Yogurt: I used greek yogurt as the base of the marinade for this recipe. It tenderizes the meat a lot more gently than other marinades. The chicken pulls apart beautifully when cooked. 

  • EVOO: Extra virgin olive oil adds some great flavor to the marinade and the chicken. It is also used in a lot of Greek recipes. I used about ½ of a cup total. Have some on the side to drizzle on the kabobs after grilling. 

  • Lemons: I used 3 fresh lemons in this recipe. The zest and juice add the perfect amount of twang to the kabobs! Try rolling and heating your lemons in the microwave for a few seconds before juicing.

  • Greek Seasoning Mix: I used a simple Greek Seasoning mix made up of minced garlic, fresh dill, onion powder, dried oregano, dried basil, kosher salt, and ground black pepper. If you have time to get fresh herbs, I highly suggest it!

  • Chicken: On most kabobs I see, boneless skinless chicken breasts are used. They are delicious when cooked the right way, but I prefer to use chicken thighs. They are a lot moister. Make sure to cut them into 1-inch cubes.

  • Bell Peppers: For some color and texture, I added a variety of colored bell peppers to the kabobs. I used a mixture of green, red, and yellow. I tossed them in EVOO, kosher salt, and ground black pepper before grilling. 

  • Red Onion: I added some red onions to kabobs as well. I cut them into 1-inch cubes just like the peppers. They tasted even better after tossing them in EVOO, kosher salt, and ground black pepper. 

  • Kosher Salt & Ground Black Pepper: I added some additional kosher salt and ground black pepper to the kabobs after they were grilled for some additional flavor. The seasoning sticks a lot better once they are fresh off the grill.

How to make EASY GREEK CHICKEN KABOBS

Now that we understand what goes into the recipe, let’s get started! I love how simple and easy this recipe is! I couldn’t get enough of these kabobs!

They are perfect for the summertime and takes no time at all to make! You and your guests will really enjoy them! The full written recipe is below, but here’s an overview.

  • STEP 1: Make the Marinade. In a large bowl mix together the Greek yogurt, EVOO, minced garlic, fresh dill, onion powder, dried oregano, dried basil, kosher salt, ground black pepper, and the zest and juice of 2 lemons. 

  • STEP 2: Make the Marinade. Add the chicken to the marinade and mix. Cover the bowl with plastic wrap or transfer the marinated chicken to a Ziploc bag. Marinate the chicken overnight in the refrigerator.

  • STEP 3: Assemble the Kabobs. On the next day, heat your grill between 350 - 400°F. Toss the chopped peppers and onions in EVOO, kosher salt, and ground black pepper. Assemble your kabobs alternating between chicken, peppers, and onions.

  • STEP 4: Grill the Kabobs. When the grill is heated, grill the kabobs for 8 - 10 minutes or until the chicken has reached between 160 - 165°F. Make sure to flip the kabobs every few minutes for even cooking.

  • STEP 5: Season & Serve the Kabobs. Remove the kabobs from the grill and top with the juice and zest of 1 lemon. Season with some extra kosher salt and ground black pepper if necessary. Serve with your choice of side dishes and enjoy!

Tips & Tricks

Here are some simple Tips & Tricks to make your kabobs easier to make:

  • To prevent your wooden skewers from burning, allow them to soak in water for 15 - 20 minutes before assembling the kabobs

  • Marinate the chicken overnight for the best results! It might take longer, but the end product will be even more tender and delicious!

  • Assemble the kabobs the night before you need to grill or bake them! The extra marinade won’t hurt the vegetables at all! It will only enhance the kabobs!

WHAT TO SERVE WITH EASY GREEK CHICKEN KABOBS:

These kabobs scream summertime! All you need is a nice sunny day, great drinks, and some amazing side dishes. You can serve these kabobs with some traditional cookout side dishes. But, let’s add some Greek Side Dishes to the mix!

Chicken Marinade:

  • If you do not have time to marinate the chicken overnight, marinate the chicken for at least 3 to 4 hours before grilling. Season the kabobs well before grilling and serving.
